"So, today was cooking day, (Sunday,) and I got decently busy. The other night, (midnight cooking,) I made crockpot bar-b-que chicken. Served it to some friends, (a couple of homeless buddies I feed,) and then froze the rest for the week.
So, today I got busy again. I wanted some other stuff for the coming week.
So, first thing in the morning I started cherry tomatoes in the crockpot, with oregano, parsley, rosemary, basil, parsley, etc… You get the idea. I stewed them down to get ready for the next step.
MEATBALLS!
Into the meat went oats, parmesan cheese, Gorgonzola cheese, Worcestershire sauce, onion, garlic, fresh herbs again, and then I fried them olive oil, in cast-iron. (I use a small ice cream scoop to get perfect sizing every time.)
As each small batch of meatballs finishes frying I transfer them to the crockpot with the tomatoes.
Then, as I’m doing that, I chop the other veggies, green pepper, more onion and garlic, mushrooms, (I got lazy at this point and did not fry them first,) etc… tossed it all into the crockpot, dumped three large cans of spaghetti sauce over it all and abandoned it for a few hours.
All I have to do is make spaghetti and dump it over it when my buddies get here.
Also did Fruit Coctail Oatmeal cookies.
